Benzoic acid is an organic acid that occurs in cranberries, huckleberries, plums, cinnamon and cloves, for example. It is occasionally still used in disinfectant solutions, but it is mainly used for the production of dyes and as a preservative in foods. Although H. Fleck describes the preservative effect of benzoic acid as early as 1875, it is only introduced into food preservation around the turn of the century - until this time there is not the technical know-how for producing benzoic acid synthetically in large amounts. Since then it has been one of the most widely used preservatives in all countries of the world.
